Connecting Classrooms: RUN-EU & TUS Supports Local School Engagement

Future Innovators Labs, under the umbrella of RUN-EU, is being launched for the upcoming academic year after a successful pilot programme that took place with local Limerick schools in February.  

This is an educational programme designed to offer innovative, regionally focused STEAM educational experiences to secondary schools with four themed workshops running throughout the 2025-2026 Academic Year, involving four Limerick secondary schools and hosted in the Taste Restaurant at Moylish. 

The initiative is supported by the Tourism Innovation Research Group, the Department of Hospitality, Tourism and Wellness and other TUS departments. The programme was designed to complement events hosted in collaboration with Thomond College in February which saw students tackle sustainability challenges in the tourism industry.

Through active participation, TUS undergraduate and postgraduate students will assist in the co-design and delivering of the sessions, gaining real-world facilitation and research experience. Workshops will explore topics such as sustainable tourism, food systems and digital innovation. 

A central feature of the workshops is the group innovation session where students apply their learning by identifying local challenges in tourism, food or sustainability and proposing creative business solutions.

Activities will include:

  • Interactive full day workshops using our technologies
  • Food science and nutrition (Science)
  • Food waste reduction (Technology and Engineering)
  • Enhancing visitor experience with VR (technology and arts)
  • Entomogaphy workshop (Science)
  • Costing activity (Maths)
